5 Healthy Breakfast Options (Recipes included)
Choosing what to have for breakfast in the mornings can pose a real challenge! Many people have 2 minutes to grab & go, and end up with a latte and a banana. To be honest, I’ve been there too…
To help with this early morning predicament, we have collated our favourite five breakfast recipes that will ensure you start your day with maximum taste and nutrition. Whether you have 60 seconds in the morning, or 60 minutes, we have you covered.
While I rarely like to single out specific macronutrients, my requirement when it comes to breakfast is adequate protein. This helps with brain function and keeps you full, which means you’re less likely to result in mindless office snacking.
Some of these recipes require a little prep the evening before, or on the weekend – but I promise you it’s worth it.
COCONUT BIRCHER MUESLI by Sarah Bell
This is a lovely breakfast for busy mornings on the go. Oats help to stabilise blood sugar levels, tahini & almonds contain protein to promote satiety, plus it’s packed full of fibre for a happy digestive system. The ingredients below serve one, so simply increase quantities if you would like to make a batch for the week.
SOCCA FLATBREAD WITH HERB YOGHURT, HARISSA & FRIED EGGS by Olivia Williamson
Socca is a chickpea flatbread, originating in France. It looks similar to a pancake and tastes delicious! Chickpeas have an impressive nutrition profile containing protein, fibre, iron & folate. This is a delightful option to try on the weekend, when you have time to sit and enjoy it.
TRIPLE BERRY SMOOTHIE by Nutrition Stripped
Smoothies are my go-to during the week, and this recipe is full of protein and antioxidants. You could also add avocado for extra health fats. It ticks the boxes for flavour, satiety & ease, which makes it a great one to whip up on a weekday.
HEMP BANANA BREAD by Sarah King
This hits the spot if you prefer to start your mornings sweet. It’s packed with fibre, and the hemp protein will keep you full until lunchtime. For extra protein plus a dose of calcium, spread with tahini before serving. A great one to make on the weekend ready for the week ahead.
BREAKFAST EGG MUFFINS, 3 WAYS by Cafe Delights
Eggs are considered a perfect protein, because they contain all nine essential amino acids in amounts that your body needs. This means that these delightful muffins are a great way to start your day. Make these on the weekend ready for a productive week!
